This week’s recipe is all about bold flavors and creamy textures: Whipped Feta with Roasted Olives. Silky, salty, and citrusy. @paletteetpalate blends feta with cream, lemon, and honey until cloud-like, then tops it with warm olives roasted in garlic, herbs, and chili. Spoon it all over a plate, add crusty bread, and you’ve got a spread that speaks for itself.

Ingredients
– Olives (a generous bowl, choose your favorites)
– 2 cloves of garlic
– 2 lemons
– 1 tbsp honey
– Fresh herbs like thyme and oregano
– Chili flakes
– Salt
– 400 g feta cheese
– 150 ml heavy cream
– Olive oil

Preparation
Preheat the oven to 180°C (356°F).
Place the olives in a baking dish along with the garlic, lemon slices, herbs, chili flakes, salt, and a good drizzle of olive oil. Roast in the oven for 15 minutes.
Meanwhile, make the whipped feta: blend the feta with the cream, the juice of 1 lemon, and the honey until smooth and creamy.
Spread the whipped feta on a plate and spoon the warm olives with oil over the top.

Delicious served with crusty bread like sourdough or a baguette. And of course: pearl spoons to finish it off!
