Chocolate Mousse

A classic chocolate mousse recipe by @paletteetpalate
Ingredients
– 250 g dark chocolate (high quality)
– 60 g butter (at room temperature)
– 100 g fine sugar
– 8 eggs, separated
Preparation
Melt the chocolate together with the butter using a bain-marie (double boiler). Once everything is melted, stir in the sugar. Remove from the heat and let it cool slightly.
Meanwhile, beat the egg whites until stiff in a clean bowl. Stir the egg yolks into the chocolate mixture one by one. Gently fold this mixture, bit by bit, into the whipped egg whites.
Chill the mousse in the fridge for at least 4 hours to set. Serve in coupe glasses. Make it extra festive by scooping it at the table!
Variation Tip
I prefer to use salted butter and chocolate with caramel pieces (chocolate + caramel + sea salt = best combo ever!). Want something fresher? Mix in some orange zest and juice into the chocolate mixture.
